Brazilian Sausage and Potatoes

This is an adaptation of a Brazilian dish which traditionally uses Linguica Calabresa sausage. Harvest Double Smoked Farmer's Sausage is the perfect substitute. We Brazilians can't live without this sausage!

Ingredients
  

  • 1 link Harvest Double Smoked Farmer's Sausage cut into 1/4" rounds
  • 2 tbsp oil
  • 1-1.5 pounds potatoes, peeled cut into bite sized chunks
  • 1.5 tsp. all-purpose seasoning
  • fresh ground pepper to taste
  • thinly sliced scallions or green onions

Instructions
 

  • Add oil to frying pan and place over medium heat until hot.
  • Add the potatoes in an even layer and press firmly to ensure that the potatoes are touching the entire surface of the pan. Let cook for 6 minutes. Do not turn.
  • Sprinkle all-purpose seasoning and black pepper.
  • Turn potatoes over to brown on the other side.
  • Scatter sausages over the potatoes, cover pan and reduce heat to low; cook for 12 – 15 minutes or until potatoes are tender. Gently toss to mix the sausages and potatoes.
  • Remove from heat, garnish with scallions/green onions and serve.

Note: If your seasoning does not have salt, you may want to add a ¼ teaspoon salt to the potatoes when adding the seasoning and black pepper.
